Elephant Sugar Cookies

It's been a while, friends, and frankly... it's due to the fact that I have been suffering from a bad case of morning sickness (or should I say "alldaysickness"?) But it's all good and thank you, yes, the bun is now toasting safe and sound in the oven! Aside from feeling pukey and lacking the urge to blog about anything tasty - things are good, and I vow to keep up with the joys that this little blog can share! Thanks for hanging in there with us as we journey on towards our Valentine's Day birthday to come for our little bakerbee! :D

Speaking of babies... I believe a certain boom is indeed afoot! I have found that this year has brought the good fate of a few little new souls to this earth and a great chance to bake as a result. These little elephant sugar cookies were a fun hit for my dear friend's little boy's birth. The recipe is a cinch, and if you can hang in there with fiddling with the perfect consistency of icing - these cookies are worth the special effort!

To the dough, I add a teaspoonful of lemon extract for a nice hint of citrus.








SUGAR COOKIE ICING


In exchange for almond extract, I used (again) the lemon extract to taste...

...and added just enough to get this perfect runny texture. This is the tricky part. You want to make sure it is soft enough to be pourable, but not too thin that it runs everywhere.

A quick make-shift parchment can be made with a simple plastic sandwich bag (sturdy freezer style is best), a coupler, and a small round size (around 003) tip.

Assemble your bag as so. Add whatever colors you wish to your icing and pipe away!


Make sure to ice perfectly cooled cookies. Before you know it, you'll have a whole herd! Let dry overnight and package as you wish for your favorite new little bakerbee! :)

those are so adorable. i think i recall eating 2 or 3 of those that were set aside as extras! yummy to boot. sugar cookies are my absolute fave. and those are the cutest i've ever seen.
