Baby Shower Coconut Cake


More baby fun! :)
We recently threw a fun baby shower for my friend and coworker to welcome her little baby boy to the world. She loves coconut (a girl after my own heart!) so I decided on a Paula Deen recipe that she had shown me a long time ago and then from there went for a fun tropical theme for the potluck party.

(Sidenote: You know, decorated cakes are actually kind of my specialty, and yet I just realized that I have hardly showcased any of them on the blog. Weird. Well, here's to more fun cakes to come!)

I decided to make a little baby out of fondant. This premade all-white rolled fondant by Wilton is fantastic for small decorations (or for covering a small cake) and is so easy to color with food color. Michael's is a great source.

My hubs was gracious enough to make the entire cake so I was able to concentrate on the fun decorating part! :)

I really love this coconut milk powder from KA Flour. It's so fresh and fantastic for times when you need less than a can of milk and don't want to waste.



To make the baby, I started with the face and hair curl, then added the straight white fondant in layers to make a swaddle...
...another layer...
...and done!

I decided to make a little banner with the extra fondant. The letters were easy and fun with a toothpick dipped in food color. I trimmed it out with a fluted pastry wheel.






The filling is a delicious sour cream mixture that helps balance the sweetness of the coconut.

The frosting is a traditional "seven minute" version that takes on a delicious marshmallowy taste that blends well with the coconut.



Gently pat on the sweetened coconut...

...then add your baby and decors as desired!
